Chicken Herbs de Provence
4 boneless, skinless chicken breast
2 Tablespoons herbs de Provence olive oil
1 Tablespoon fresh squeezed lemon juice (it can be replace for 1 tablespoon of Sicilian lemon balsamic vinegar)
1 teaspoon Herbs de Provence
Salt and black pepper to taste
Prepare the grill to medium to high heat.
In a small bowl, stir together the olive oil, lemon juice (or balsamic vinegar) and Herbs de Provence.
Pour herb mixture on chicken breasts and let it marinated for 30 minutes
Grill the chicken over med/high heat for 8 to 10 minutes on each side until chicken is cooked through and juices run clear.
To prepare in the oven: Follow the same directions for marinating. Preheat oven to 350 degrees. Bake, uncovered for 25 to 30 minutes until chicken is cooked through.
